Pad Thai with Zoodles

Here is a super healthy take on the traditional pad thai, which is gluten free and vegan friendly. Its perfect as a refreshing side dish or for a lunch time meal.

Zucchini & Vegetable Noodles
Sauce
Topping

Method
 

  1. Use a vegetable peeler, spiral slicer or turning slicer to make thick or thin zucchini noodles.
  2. Thinly slice / julienne other vegetables.
  3. Place all sauce ingredients in a blender and blend until smooth.
  4. Pour sauce over vegetable noodles.
  5. Sprinkle topping over the dish and enjoy!
